New Restaurant to Open at The Ritz-Carlton, Millenia Singapore in September 2015

Many of you already know that the Greenhouse restaurant at The Ritz-Carlton, Millenia Singapore was closed in late-March 2015 and today, the hotel has officially announced a brand new restaurant called Colony which will be open on 16 September 2015.

Following a five-month transformation, Colony will allude a seafarious voyage that the British took to travel to the East Indies for trade and commerce in the late eighteenth century. It will bring diners along a journey of authentic Singaporean, Malaysian, Indonesian, Indian, Chinese and Western cuisines.

Colony can accommodate up to 260 diners and it boasts a dynamic space that can be configured to accommodate groups of various sizes.  The restaurant will offer breakfast, lunch, afternoon tea and dinner daily, and vintage Champagne brunch on Sundays. The first 100 bookings for lunch or dinner at Colony will enjoy an exclusive “Opening Privilege”. Each reservation with a minimum of four paying guests, will receive a complimentary bottle of house wine to enjoy with their meal.

The Summer Pavilion at The Ritz-Carlton Millenia Singapore needs no introduction - it was the first Cantonese restaurant in a hotel to receive One Michelin star in Singapore and the food has always been consistently good. I have been to the restaurant on multiple occasions (usually in the day) and the lighting has always been great but unfortunately this time, I was stuck with a dinner tasting of the Chinese New Year menu and therefore the images do not do the food any justice.
